Dynamic pricing in pubs is not new, Happy Hour, 2-for-1 offers and half-price drinks are all aspects of price-led differentiation. Charging more at busy times is just another form of driving revenue. Some customers may baulk at the higher prices in the evening or weekend, but the impact is likely to be marginal.
